Butcher Academy

IMS of Smithfield operates a Butchery Academy for chefs.

This one-day course aims to give chefs a first-hand insight into the various stages involved in the preparation of the meat and poultry that they are going to be cooking.

The course will also give an illustration of our business and make the chefs aware of the cost effective “alternative” cuts we offer. The course is based around practical work and attendees take part in all areas of meat processing, from boning out legs of pork to portion control.
